Here's the recipe:
2 c. brown sugar
1 c. oil
1 1/2 c. pumpkin
2 eggs
3 c. flour
1 t. salt
1 t. baking soda
1 t. baking powder
1 t. vanilla
1 1/2 T. cinnamon
1/2 T. ginger
Drop on baking sheet. Bake at 350 degrees for 10-12 min.
Filling: 1 egg white (beat stiff), then add 2 T. milk, 1 t. vanilla,1 c. powdered sugar, and mix well.
Then add 1 more c. powdered sugar and 3/4 c. shortening. Mix well. Enjoy!

it's that time of the year when i start asking, "when can i visit the racks?!?" mmm... think you can whip up a batch of these at thanksgiving???
Oh, and don't we wish Amanda could have been sitting at the table with us when we were totally indulging ourselves with those amazing amazing pumpkin delights!!! ...I think there would have been enough...of course, Clayton ate 3 of them, and so did Jeff...maybe 4???...
